Lemon Chicken

This is a really simple delicious dish. It plays on the classic combination of lemon and chicken and leaves it at that. The chicken is marinated in lemon juice which not only tenderizes the chicken, but also adds a bunch of flavour. It is then baked with a sprinkling of sugar which doesn’t add sweetness, it intensifies the lemon flavour. By browning the chicken ahead of baking, you get a lovely caramelization that also makes the dish look great. I would definitely make this for a dinner party, especially one with picky eaters. Who doesn’t like chicken with lemon? Simply serve it with some sautéed potatoes and a green salad.You could easily use the chicken breast in this recipe as well. I didn’t because I used up the breast of my chicken to make Chicken with Mushrooms and Bacon. If you use the breast as well, this recipe will serve 4.

Serves 2 (4 if you use the breast as well)

  • dark meat of a chicken (i.e. 2 drumsticks, 2 thighs, 2 wings)
  • 1 cup lemon juice
  • 1 lemon (you’ll need both the juice and zest)
  • 1/2 cup flour (use rice flour if you’re gluten free)
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 cube chicken stock
  1. Marinate the chicken in the lemon juice overnight. Turn the chicken every now and then to avoid super lemony pieces and some that don’t have any lemon at all.
  2. Preheat the oven to 350F (180C).
  3. Heat 1 tbsp of the olive oil in a large frying pan over high.
  4. As the oil heats, mix the salt, pepper, paprika, and flour on a plate.
  5. Remove the chicken from the marinade and pat each piece dry.
  6. Roll the chicken pieces in the flour so that they are thoroughly covered.
  7. Brown both sides of the chicken in batches to avoid overcrowding. Add more olive oil as necessary.
  8. Set the browned chicken pieces in a shallow baking dish.
  9. Zest the lemon and mix with the brown sugar.
  10. Sprinkle the lemon sugar evenly over each piece of chicken.
  11. Cut six thin slices of the zested lemon and set one on top of each chicken piece.
  12. Dissolve the chicken cube in half a cup of boiling water.
  13. Pour the stock around the chicken pieces. Don’t pour the stock over the chicken because it will dissolve the sugar.
  14. Bake for 50 minutes until the chicken in cooked.
